This post shares 11 Easy Weeknight Dinners to keep in your arsenal of recipes. No more “what to make for dinner?”! 

As of today most major cities have closed all non-essential businesses in attempts to slow down the coronavirus and banned eating in restaurants on site. Now is the time to either put your cooking skills to use or to learn how to cook. Here I’m sharing my top easy recipes however I want to share that these can be meal starters and substituting whatever you have on hand. Baking for the most part, needs to be exact. Cooking does not. You can saute, stir and combine to your belly’s desire.

Your freezer will be the key to maximizing meals. Many of these you can portion out and store. I mean just last week I cooked a lasagna that was in the freezer for weeks! It’s all about the prep, prepare and store. Sharpen your knives, use that kitchen tool you got for Christmas and let’s do this. 

  1. Cilantro Lime Chicken Skewers – grill season is here! But if you don’t have a grill you can use a grill or frying pan large enough for your skewers. I would marinate up to 24 hours for the best flavor but you can also toss this together 30 minutes before. The lime is super refreshing.

2. Tortellini and Arugula Soup – by far one of my most popular recipes, this hearty soup brings happiness. Fresh warm and cheese tortellini are idea, but any stuffed pasta or even regular pasta shape will do to get this one going. All vegetables work for this one. You won’t be disappointed, trust me. 

3. Grilled Peach and Buratta Salad if you’re really missing your restaurant outings and glass of wine, this is an easy one to make you feel fancy with a little balsamic glaze. BTW, you can totally make your own balsamic reduction. I’ll share with you if you DM me, but if you buy it or have it on hand is better, otherwise you bring a pungent smell to your kitchen reducing to a glaze. Just saying. 

3. Teriyaki Beef + Broccoli Bowls – you can take your chances with take out or stay super safe by making your own. Come on people, I KNOW YOU BOUGHT A FEW PACKETS OF RAMEN NOODLES when you went grocery shopping for the last time, amirite?! Turn it into a ramen bowl with beef, broccoli and sweet and tangy teriyaki. You can sub beef for chicken or tofu here. I mean, be crazy, use another vegetable. Ramen Noddle soup is good, I get it. But dress up your noodles into this bowl and you won’t be disappointed. 

5. Pasta Fagioli Soup – who doesn’t have a couple boxes of pasta on hand. Use canned tomatoes and can’t beans and you can eat this soup all quarantine long. Tip – cook the pasta separately and freeze the soup into a muffin tin. After the soup freezes you can place the muffin sized portions into a zip lock bag and store for a month – two. When you’re ready to eat pop out as many as you’d like, cook in a pan over low to medium heat and add pasta. Instant meal.

6. Sweetgreen Copycat Harvest Bowl Sweetgreen is closed, and it hurts. I totally get it. Follow the recipe for the copy cat salad to a T and I swear you’ll think you’re there. Make some mint iced tea and call it a lunch! 

7. Mediterranean Roasted Red Stuffed Peppers – It’s like a greek salad in a pepper and SO good. As soon as the quarantine is over I’m headed to Greece! And France! And London! We will all miss traveling for who knows long. Mix up your meals and pretend to be looking out over the Mediterranean. 

8. Pulled Chicken BBQ Skillet – what’s better than BBQ, a little Mexican seasoning, all in a bowl with lots and lots of cheese? NOT MUCH. 

9. Chicken Nuggets Your Kids Will Love Have a kid at home that only eats chicken nuggets? You’re not alone. This recipe is for a healthier version in case you don’t have your frozen option on hand. You can also quickly make breadcrumbs if you didn’t buy any prior to the quarantine. Put a few slices of bread in the toaster, then put the toast into a food processor, viola! Bread crumbs. If you don’t have a food processor mince the toast as much as you can. Chunky bread crumbs are still delicious

10. Buffalo Chicken Stuffed Peppers – a stuffed pepper so good you won’t want to miss. For this one you will need a buffalo sauce. Tabasco can work too. Crunchy, surprisingly healthy, this recipe is awesome.

 

11. The Best Damn Meatball Recipethe Sunday supper you always want to make. My meatball recipe with pasta is the perfect hearty meal. Use any type of meat you have on hand, plop these babies into a sauce jarred or make your own and a handful of whatever Italian herbs you have on hand and you’ll be in Sunday supper heaven!
