Roasted Parmesan Cauliflower

  • One head of fresh cauliflower, florets sliced horizontally
  • 2 tablespoons melted butter
  • 1 tablespoon EVOO
  • Salt and pepper to taste
  • ½ grated Parmesan cheese
  • Handful of chopped fresh parsley
  1. Preheat oven to 400 degrees.
  2. In a large bowl, toss the cauliflower with EVOO, butter and salt and pepper to taste.
  3. Transfer the cauliflower to a baking sheet or pan in a single later.
  4. Roast until tender for about 28 minutes.
  5. Remove from oven and sprinkle with parmesan cheese and parsley.
  6. Roast for 5 more minutes until cauliflower turns golden brown and cheese is melted.
  7. Remove from oven and enjoy the crusty, buttery flavor.
