I’ve never met a potato I didn’t like. That’s why this recipe for Roasted Baby Potatoes is perfect.
Preheat oven to 425 degrees
1 lb potatoes, mixed baby yellow, red and purple shown here
1 shallot, diced
1 small yellow onion, finely diced
3 cloves garlic, minced
1/8 cup EVOO
Sea Salt (table salt works too but go out and buy some sea salt)
¼ cup fresh parsley for garnish
Depending on your potato size half or quarter potatoes to your liking. Place in a mixing bowl and douse with Olive Oil, about ¼ cup. This is where you get to look fancy with your oil bottle. Toss all ingredients together (excluding parsley) ensuring all potatoes are coated. Season with salt and pepper to taste. Transfer potatoes onto a sheet pan. Roast on center rack at 400 for 45 minutes until browned. Plate into one of your fancy plates and toss with fresh parsley.
