Slow cooking is a working mom’s best friend and method for making flavorful meals that you can use all week. I used this recipe for crunchy tacos adding on a little cheddar, diced tomatoes and a drop of cool ranch dressing. SO good. Use this for tacos, sliders, sandwiches or even with just a side of veggies for the littles.
1-2 lbs Chicken Breast
1-2 cups BBQ sauce
1/2 Green Bell Pepper
1/2 small yellow onion
1/2 small red onion
2 cloves crushed garlic
1/4 cup chopped fresh cilantro
salt and pepper to taste
Chop up pepper and onions in to large chucks. Salt and pepper chicken. Place chicken into slow cooker and cover with BBQ sauce. Use appropriate amount of sauce to your amount of chicken. 1-2 lbs of chicken is enough for a family of 4. Use one chicken breast per a person.
Place veggies and garlic on top. Sprinkle on your chopped cilantro. Cover and cook on low for 6-8 hours or on high for 3-4. Get ready to be hungry, your house will start to smell amazing.
At the time your chicken is cooked, pull it out and place on a cutting board. Using two forks in a criss-cross motion pull apart and shred the chicken. This will also help you to ensure your chicken is cooked, for all you chicken over cookers out there. The fear of somenella is real. I know, I know.
Return shredded chicken back to the slow cooker to soak up all the sauce and juices. Cook on low or ‘keep warm’ for about ten more minutes. Then you can start to feed all the littles and pups crowding around!
