Watermelon, Feta and Mint Salad

Jackpot! Wild mint and TONS of it growing in my little yard. It was either mojitos or this Watermelon, Feta and Mint Salad  extra feta please

Knock knock knock…. Well hello summer! Yes you’re here! I can feel it! So glad you could make it! This.is.so.good. Okay ready to make a refreshing, simple side? The key to salad recipes that call for EVOO is to ensure you buy good quality oil. Don’t skimp. You want your oil to taste light and enhance the flavors. Using the wrong oil for this can taste like a shot of olive oil right to the face. For some reason when I’m in Nordstrom, I have no problem spending $200 or more on a pair of shoes. Yet when I’m in the grocery store, everything is expensive! $9 for a bottle of Olive Oil?! (puts it back on shelf)…go back. Pick it up. You’ll need it this summer.

Ingredients:

4 cups chopped watermelon cubes

½ cup crumbled feta cheese

1/3 cup Extra Virgin Olive Oil

¼ cup chopped mint

1/8 cup thinly sliced small red onion

½ of a lemon, juice squeezed

1 teaspoon of tabasco sauce

Fresh ground pepper (yes it makes a difference) and Sea Salt to taste

Directions:

This is a recipe where it’s better to go easy on the ingredients and add more to your liking. Place EVOO in a bowl. Squeeze in the lemon juice. Add the tabasco sauce and salt and pepper. Whisk away! Once mixed, add in your watermelon, mint and feta. Mix until coated. Serve in small pretty dishes and garnish with mint and extra feta crumbles on top. Hello Summer.
